Artichoke Dip
This is one of my favorite recipes. It was given to me by a friend. You can buy the vegan mayonaise, vegan cream cheese, and the vegan parmesian at most natural food stores.

2 6-oz. jars of artichoke hearts, drained and roughly chopped
1/2 cup vegan mayonnaise
1/2 cup non-dairy cream cheese
1/4 tsp salt
1/4 tsp black pepper
4 tbsp soy Parmesan cheese

Preheat oven to 350 degrees F. In a large bowl, combine the artichoke hearts, vegan mayonnaise, vegan cream cheese, salt, pepper and 2 tbsp of soy Parmesan. Mix together well and spoon into an 8x8 baking dish. Sprinkle top with remaining soy Parmesan and bake for 25-30 minutes or until top begins to brown.
